Caribbean Goat Curry

Jamaican Goat Curry
Ingredients:

Goat meat: 500g for bold spice, or 1kg for recommended flavour use

100g Jamaican spice mix

500ml coconut milk

1 medium onion, diced

3 garlic cloves, minced

1 tbsp ginger, grated

1 bell pepper, diced

2 medium carrots, sliced

2 potatoes, cubed

1 tbsp tomato paste

2 tbsp cooking oil

500ml chicken stock

Instructions:

Rub the goat meat with 80g of the Jamaican spice mix (reserve 20g for later), ensuring it’s evenly coated. Marinate for 30 minutes.

Heat oil in a pot, brown the goat meat, and set aside.

Sauté onion, garlic, and ginger in the same pot until aromatic.

Stir in the reserved spice mix and tomato paste, followed by the vegetables.

Add coconut milk, stock, and the goat meat. Simmer for 40–60 minutes until tender.

Suggest serving with rice, or for the most authentic accompaniment, rice and peas.
